I’ll be honest right up front..There is no gluten, or sugar in this….but everybody loves them anyway.. If I ‘accidentally’ ate all the chocolate in the house, I make Oatmeal Raisin Cookies instead.. pretty much the same recipe…but. with. …raisins.
Combine In a smaller bowl:
1 1/4 cup of all-purpose gluten free flour
(you may substitute up half to of this with almond flour if you wish)
1/2 tsp. baking powder
1/2 tsp baking soda
1/2 tsp. cinnamon
1/4 tsp. himalayan pink salt
then:
Combine in a bigger bowl
1/2 cup of Butter, Ghee or melted cocoa butter
3/4 cup coconut palm sugar
1 1/2 tsp, vanilla extract
1 egg (or go eggless: 1/4 veg. oil OR 1tbsp cornstarch +2tbsp water)
2 tbsp almond milk
cream it all up together while chanting gratitudes and appreciations out loud, quietly or in your head
then add the flour mixture to the creamy-sugary mix- more love and appreciation and gratitude
then add:
1 cup gluten free quick oats
2 Lily’s chocolate Bars broken into chunks (my favorite)
OR
1 package of Lily’s chocolate chips (they are sweetened with stevia)
or 1 3/4 cup of raw cacao nibs (you can soak them in almond milk for a half hour to soften them a bit)
optional: add your favorite nuts too (i love pecans or walnuts in here)…or raisins, or nuts and raisins, go crazy!
12 minutes in a 350 degree oven
Eat em up.
it’s ALL good.
